Peanut Butter Fudge Balls

An easy protein snack to take along anywhere – just put in a baggie & go!


Ingredients

5 Scoops Chocolate Protein Powder

2/3 cup Flax Meal

4 Tablespoons Natural Chunky Peanut Butter

2-4 packets Splenda, to taste

1/4 Cup Water

1 cup Oat Bran


Instructions

Mix everything together - except the oat bran – in a large bowl. Keep mixing (it will seem overly dry and sticky) until it becomes a sticky blob of fudge (add a couple extra tablespoons of water if needed). Roll into several (usually 8 to 10) fudge balls. Put the oat bran into a small bowl, then roll each ball thru the oat bran. Coconut can be used with the Oat Bran as well. This will keep the sticki-ness factor down, and adds some healthy fiber. Stores best chilled in the freezer or fridge, but you can eat however you like.

We often eat ours with just a spoon from the bowl!
